Life has slowed down a bit so I am getting a chance to try out some recipes from some of the fabulous cooking blogs I've been reading. I actually made this one up after being inspired by the petite lasagna cups on this site: Can You Stay for Dinner?
(Side note, this blog is so inspirational. Andie is a FANTASTIC writer who encourages a healthy relationship with food) She uses wonton wrappers in many her recipes and I thought it would work in this.
It certainly isn't the most glamorous looking breakfast but it is filling, delicious and healthy.
Prep time 8 minutes
Cooking time 10 minutes
Skill Level: Easy
Ingredients:
12 eggs
4 slices cooked turkey bacon
1/2 cup low fat shredded cheddar cheese
24 wonton wrappers
salt and pepper to taste
Instructions:
Preheat oven to 375. Spray full size cup cake tin with Smart Balance cooking spray. Layer two wonton wrappers in each cup, over lapping to make sure all sides are covered. Crack one egg into each cup (scramble in a bowl first if you prefer), crumble 1/3 slice of turkey bacon over the top, and sprinkle cheese evenly over the 12 cups.
Bake for 10-12 minutes (based on how you want the yolk)
Weight Watchers Points Plus: 3 points each
Next time I might add some wilted spinach, mushrooms, or other veggies which won't effect the points.
Tomorrow I will test how good they are reheated. My goal is for these to be grab and go to eat at my desk after a morning at the gym!
